Preheat warming drawer to high.
1. Heat skillet, spray then add chicken and cook 4 min each side till golden. Remove, cover and keep warm.
2. Add lemon juice and capers to skillet, cook over med heat, stirring to incorporate browned bits for 5 min (add a little wine to deglaze if desired).
3. Spray chicken both sides with butter spray, return to pan and cook 5 min more.
