Fill a large pot with water and chicken thighs. Cut-up celery, onion and garlic and add to the pot with chicken. Add any seasoning to taste such as; onion or garlic salt, onion or garlic powder, season salt, etc. Bring to a rapid boil then reduce to a gentle boil. Cook chicken for about 2 hours.
Chicken should become soft and come off the bone easily by pressing at meat with a spoon. Scoop out the bones and throw away. Add Zataran's Dirty Rice Mix, and cut up Polsa Kielbasa and hotlink to smaller pieces, then add to the pot of shredded chicken meat. Let cook for 20 minutes and then add gumbo file seasoning and bay leaves. Cook for another 20 minutes then add the shrimp, crab and corn.
Note: Some people like to add okra. Since i don't like okra I use corn instead.
