In medium skillet, over medium high heat, heat half the oil. Add chicken in 2 batches and cook until browned, stiring often. Set aside.
Reduce heat to medium. Add remaining oil. Add mushrooms and onions and cook until tender. Combine 2 oz. water, cream, cream cheese and boullion in a bowl. Microwave until melted together. Stir until smooth.
Add that mixture, sour cream and additional 1/4 cup water. Heat to simmer and add chicken to pan. Heat thoroughly.
