In a medium skillet, over medium heat, cook chicken until no longer pink. Once cooked take fork and shred chicken.
Add olive oil to large skillet and warm shredded chicken over medium heat.
Combine soy sauce, honey, brown sugar, garlic and water and bring to a boil. Add to skillet with shredded chicken. Cover, reduce heat and simmer for 10-15 minutes.
Serve over hot cooked rice, of choice.
