Easy to make and Good - few ingredients. Can also be cooked in crockpot on low for 6-8 hours. Stir at least once if possible.
Wash chicken pieces (remove skin and dig out pockets of fat if you are being careful of cholesterol) and pat dry. Salt on both sides.
Place chicken pieces, skin side up, very close together in foil-lined roasting pan. Mix Russian dressing, apricot jam (sugarless kind works fine) and onion soup; mix together. Spread over chicken pieces.
Bake, uncovered, for 2 hours in a 300 degree oven.
Baste chicken several times during cooking and be careful sauce doesn't burn. Serves 8.
