1. Saute celery in olive oil over med heat 3-4 min or until tender.
2. Stir in tomatoes through sugar, reduce heat to low, simmer, stirring occasionally, for 20 min.
3. Stir in parsley, green onions, and hot sauce.
Store in refrigerator up to 2 days.
