Cut pork into 4 pieces. Coat slow cooker with oil or spray. Place pork, peppers, broth, teriyaki sauce, vinegar, pepper flakes and garlic in cooker. Cover and cook on low setting approx. 3 to 4 hours, until pork is tender. Remove pork and cut into serving peices. Add peanut butter, stir well to dissolve. Can thicken sauce with a little instant flour mixed with cold water.
Add meat back to heat through. Serve in shallow bowls over cooked jasmine rice. Sprinkle with onions and peanuts. Pass lime wedges.
Serve with steamed carrots, snap peas or sauted bok choy....
Can add hot sauce of your choice instead of/ or in addition to hot pepper flakes.
