This recipe is a fiesta at mealtime! Ground beef is combined with beans, tomatoes, corn and spices. It simmers in the Slow Cooker and then is topped with an easy tamale topping made from cornbread mix. Finally, it is topped off with a handful of cheese and it is ready to enjoy! Serve with some of your favorite toppings: sour cream, lettuce or salsa.
When you're in the mood for a spicey, south-of-the-border meal and need a quick fix for dinner, try this crockpot tamale pie.
In a large skillet, cook ground beef over medium heat, breaking up with a spatula, until no longer pink; drain and return beef to skillet. Remove from heat and stir in cumin, chili powder, salt, and pepper.
Transfer to a 5 quart crock pot; stir in the beans, tomatoes with green chilis, corn, enchilada sauce, onions, and cilantro. Cover and cook on low for 7 hrs.
After beef mixture has cooked for 7 hours, combine the corn mix and eggs in a small bowl; spoon corn mix over the meat mixture. Cover and cook 1 hour longer or until a toothpick inserted in the center of the corn mix comes out clean. Sprinkle with cheese and let stand until melted.
Helpful Tips: Serve with sour cream and shredded lettuce, if desired.
