Quick, simple breakfast using leftovers!
1. Cut tortillas into 1"x 1" squares and fry in oil on medium heat until starting to crisp.
2. Add onions and cook another 4-5 minutes. Stir frequently.
3. Add tomatoes, salt, and jalapeno pepper and cook another 2-3 minutes.
4. Add eggs and stir to combine. Cook until eggs are set. Enjoy.
We sometimes use leftover tortilla chips instead of fresh tortillas. Makes the same breakfast, just faster. You can also use stale tortillas if you have them. We also substitute homemade salsa for the tomatoes and jalapeno peppers. Even faster yet!
