Suggest a better descriptionPreheat oven to 400 degrees. Oil insides of 4 gem size (1 3/4 inch) muffin tins (48 cups) with vegetable cooking spray. Press 1 1/2 teaspoons cream cheese pastry evenly into each muffin cup to line bottom and sides.
Distribute Canadian bacon and cheese evenly among pastry shells. In a medium bowl, mix eggs, cream, salt, cayenne, and nutmeg until well blended. Using a ladle or a turkey baster, fill unbaked shells about 3/4 full.
Bake 15 minutes, or until filling is puffed and golden and pastry is lightly browned. Serve warm or at room temperature. (Baked mini quiche can be refrigerated up to 3 days or frozen. Reheat in a 400 degree oven for 5 to 10 minutes before serving)
