Fast & Easy Mini Quiches
Preheat oven to 400 degrees F. Coat 12-cup muffin tin with cooking spray.
Place one cracker in bottom of each muffin cup.
In a medium bowl, beat 2 eggs. Combine remaining ingredients. Mix well.
Spoon mixture evenly into muffin cups.
Bake 18-20 mins, or until light golden color.
