Place 16 oz package of beans into large stock pot with 8 cups of chicken broth. Bring to a boil. Boil for 2 minutes and then remove from heat and let sit for 1 hour. Add ham bone, cubes ham and water to stock pot and bring to boil. Once boiling, reduce to a simmer and let simmer for 2 hours or longer if you please. Then add celery, garlic, and mashed potatoes. Simmer for another 1-2 hours. Remove bone, add salt and pepper to taste, stir and serve. Enjoy!
