Suggest a better descriptionIf sausages are in casings remove them and ground them in pan. It is so much easier to get the Jimmy Dean type already ground and loose. In frying pan brown sausage. I don’t drain it as I like the flavor that it provides. Add 3 jars of pasta sauce, oregano to taste, and water; blend well. Simmer 5 minutes.
In medium bowl combine ricotta cheese, chives and egg; mix well. ( If you want to keep 2 good sized tablespoons aside, you can use that for the top when finished.)
In ungreased lasagna pan spread pasta sauce to completely cover the bottom of the pan. Top with a layer of uncooked lasagna noodles. Top the noodles with ½ of the ricotta cheese mixture and ½ of the mozzarella cheese. Repeat layers of pasta sauce, noodles, ricotta and mozzarella. Top with remaining sauce, sprinkle with Parmesan cheese. (If you saved the 2 tablespoons of ricotta, put that in 2 dollops on top of the lasagna for presentation. I also like to sprinkle oregano on top.
Cover and refrigerate overnight. (I like to keep the lasagna pan on a cookie sheet lined with foil in case of any spillage while refrigerating as well as while cooking.)
When ready to cook, heat over to 350 degrees. Uncover lasagna. Bake 60 – 90 minutes, until sauce is bubbly and center of lasagna is hot. Let stand 15 minutes before serving. Serves 12. Enjoy!
