Heat the stove to High, then place sugar in a saucepan. Heat sugar until 1 or 2 brown bubbles appear. Add the hot water and boil for 5 minutes. Remove from heat and add 1 teaspoon of flavouring (eg vanilla essence, apricot essence, etc.) Pour into a bottle and serve on pancakes.
Make sure you use very hot water, out of the kettle. Be careful when cooking with sugar as it gets very hot!
