Heat oven to 400 degrees. Spray 12 muffin cups with cooking spray. In a large bowl, combine pecans, brown sugar, and cinnamon, reserving 1/3 cup. Add remaining ingredients to bowl and stir until just moistened. Spoon mix into muffin cups, 1/2 full. Sprinkle with reserved pecan mix. Bake 15 minutes, or until a toothpick inserted in center comes out clean.
