Drain pineapple; reserve 3/4 cup juice. Combine reserved juice, pineapple juice, sugar, cornstarch, lemon juice and vanilla in saucepan. Add prunes. Cook stirring constantly, until mixture boils and thickens. Cool. Stir in lemon peel and pineapple. Spoon into dessert dishes. Top with whipped toppings and sprinkle with almonds, if desired.
