Suggest a better descriptionEmpty mix package contents into large mixing bowl. Sift together the dried potato shreds and flour mixture. Add boiling water and mix thoroughly; blend in the eggs. Let batter rest ten minutes. Heat oil in large skillet over medium heat. Drop batter by tablespoon into pan, spreading it slightly. Cover and fry until golden-brown on one side, then turn and cook other side. Stack finished pancakes and, if desired keep warm in 150-F oven. Serve with sour cream or applesauce. Note: I didnt have any applesauce or cream, but the latkes taste fine with strawberry jam; actually, they taste quite fine even without a topping.
