This is a quick and easy recipe for pumpkin pancakes.
Mix all ingredients in a large bowl until well blended.
Heat griddle to approx 325-350 degrees.
Lightly spray with cooking spray.
Using 1/4 cup measure cup, pour pancake mix on to griddle and cook until golden brown on both sides.
Enjoy.
They are lightly flavored, if you prefer a heavier spicier flavor adjust to add more pumpkin and more pumpkin pie spice. Shown in picture with Cinnamon maple glazed pears and apples and spiced pecans.
