Heat oven to 350 degrees.
Spray 10-1/2 inch pie plate with nonstick cooking spray. Add all but the last three ingredients (they are for the topping) in a blender or food processor.
Cover and blend until smooth.
Pour into pie plate. Sprinkle with brown sugar topping.
Brown Sugar Topping
Mix brown sugar, quick oats, and softened butter together and sprinkle over pie filling.
Bake 50 to 60 minutes or until knife inserted in center comes out clean. Cool 15 minutes. Refrigerate about 4 hours or until chilled before serving.
