Preheat oven to 375 degrees. Put lemon inside dried chicken. Do not add salt, pepper or any other seasonings or oil. Place in a roasting pan on its back. You won't need to truss this bird, just nestle drumsticks against the body. Bake for 1.5 to 2 hours until thermometer reads 185 degrees. When thoroughly baked, remove from oven and cover with tin foil for 10 minutes to allow it to rest.
This is a Julia Child's recipe that I love. You simply cannot do it wrong. If you want any extra seasonings, try putting several bay leaves inside with the lemon. Don't let the fragrance of the baking chicken concern you - it will smell like a cooking lemon because it is. I always slit the baked lemon and just juice it into a container to be used for salad dressing or lemonaid.
