Cut the steak diagonally (across the grain) into thin slices. In a bowl, combine meat and cornstarch; toss well.
Heat the oil in a skillet with a tight-fitting lid over medium-high heat; add meat and saute for 5 minutes; add onion and saute for 1 minute. Add mushrooms.
Cover and cook for 2 minutes then add broth and salt and pepper to taste. Reduce heat and simmer, uncovered, for 5 minutes. Remove from heat; stir in sour cream and chopped parsley. Sprinkle paprika over the top; serve.
