This easy vegetarian spinach soup reminds of the steaming hot and cheesy spinach soup served in restaurants with a chunk of crusty bread. Spinach soup is so healthy, and the addition of creamy Mascarpone cheese makes this spinach soup recipe smooth and tasty.
In a large saucepan, sautee the onion and garlic in the margarine for 3 to 5 minutes, until onions turn soft. Add the spinach and the vegetable broth and bring to a boil. Reduce heat, then bring to a simmer. Cover, and allow to cook for 15 minutes.
Transfer the mixture to a blender or food processor and process until smooth, then return to the saucepan. Over low heat, add the mascarpone cheese and stir until melted. Add a dash of salt and pepper and serve immediately.
