Easy and healthy.
1. In a large pot over medium heat, combine corn, beans, broth and salsa.
2. Bring to a boil, then reduce heat and stir in cooked ground beef. Season with salt and pepper.
3. Cover and cook 5 to 10 minutes, until heated through.
4. In a bowl, stir together sour cream and guacamole until smooth.
5. Ladle soup into bowls and top with guacamole mixture. Serve w/ tortilla chips.
I like to blend the salsa in a food processor or blender to get rid of the chunks.
