1) In a bowl using an electric mixer on high speed, blend the first 4 ingredients for 30 seconds.
2) In a small bowl, combine the rum and espresso.
3) Arrange 1 package of lady fingers in bottom of a 3 quart bowl or trifle dish. Brush with half the rum/espresso mixture. Layer half the mascarpone cheese mixture lady fingers and then half the grated chocolate. Repeat with remainder of ingredients. Cover and chill for 8 hours.
Mascarpone is a soft, fresh triple cream dessert cheese with a fluffy texture. It's often sold in plastic tubs. If you can't find it, you can substitute 2 80z packages of cream cheese, softened, 1/3 cup sour cream, and 1/4 cup whipping cream. Beat until well blended. Makes 16 oz of mascarpone cheese.
