In a medium mixing bowl, combine ground turkey, tomato sauce, 1/4 cup Parmesan Cheese, Italian seasoning, and Dijon Mustard. Form mixture into 4 portion sized paddies.
Place turkey paddies on hot grill and cook for about 6 minutes. Turn and cook until no longer pink in the center about 6 more minutes.
Clean mushrooms by wiping them with a damp cloth. Remove and discard stems. Brush mushroom caps with olive oil. Place on hot grill and cook for 2 minutes. Turn and cook 2 more minutes; set aside
Place Italian Bread slices on a baking sheet and place under broiler until lightly toasted, about 3 minutes.
Top each toasted bread slice with cooked turkey burger, a portobello mushroom, 1/2 C marinara sauce and a slice of provolone. Place under the broiler until cheese melts and sauce is warmed through, about 3 minutes.
Top each with a tablespoon of Parmesan cheese.
