Place the peeled shrimp in a bowl and sprinkle with the lemon juice, salt and cayenne pepper. Set aside.
Heat the bacon grease in a skillet. Saute the onion and bell pepper over medium heat until onion is transparent, about 10 minutes.
Sprinkle flour over the vegetables, and continue to cook stirring constantly for about 2 minutes until flour begins to brown.
Add tthe shrimp and 3/4 cup broth, stirring constantly and turning the shrimp so they cook evenly. Cook for 2 to 3 minutes, until shrimp are cooked through and gravy is uniformly smooth, thinning with remaining broth if necessary.
Serve immediately with hominy.
