Fry and drain sausage.
Spray large rectangular casserole with nonstick spray. Place croutons on bottom and layer with cheese then sausage.
Beat eggs, mustard and 2 cups milk. Pour over croutons/cheese/sausage.
Cover and refrigerate overnight.
Prior to baking, mix cream of mushroom soup with 1/2 cup of milk and pour over set casserole.
Bake uncovered at 300 degrees for 1 1/2 hours.
