1. Boil potatoes till fork tender, remove from heat and cover with cold water to cool. At same time potatoes are cooking, boil eggs 7 minutes and remove to cool. Steam cauliflower to just fork tender and remove to cool.
2. Clean spring mix, radishes and radish leaves, and cucumbers. Dry spring mix and radish leaves, thinly slice radishes. Peel both cucumbers and thinly slice 1 and 1/2 of the cucumbers, reserve the other 1/2 cucumber for the dressing.
3. For dressing, in a food processor or blender, add balsamic, dill, olive oil, salt, pepper. Blend together till well mixed. Add 1/2 cucumber and yogurt, pulse to desired consistency.
4. Peel eggs and quarter, half potatoes, cut cauliflower into bite size pieces. Toss Spring mix, radish leaves,potatoes, cauliflower, cucumbers, and radishes together. Drizzle with dressing.
