Cheesy Egg, Bacon,pancake baked in individual crocks
Preheat oven to 375 degrees.
Saute diced onion until soft and translucent. (1-2 minutes)
Prepare individual crocks by adding 1 tsp. melted butter to bottom of each crock.
In a medium bowl, whisk together 1/2 cup pancake/waffle mix, 1 cup milk, 1 egg and remaining melted butter.
Pour this mixture, dividing amount evenly between the small crocks.
Divide 1/2 of the cheese, then bacon, then sausage (if using) and layer on top of the pancake mixture in each crock.
In a medium bowl, add 3 eggs and 1/2 cup of milk. Whisk briefly to combine. Add salt & pepper as desired. Stir in the onion.
Pour this mixture over each of the 6 crocks.
Add remaining bacon and sausage on top. Then add the remaining cheese last.
Bake @ 375 for 30 - 40 minutes or until a pick comes out clean from the center.
The crocks I used were miniature Le Creuset 1 cup oval ceramic crocks with lids
