instant pot egg bites
1. Start by adding 2 cups of water to the instant pot bowl.
2. In a small mixing bowl, mix together the eggs, cheese, ham, milk, green onion, and salt and pepper, mix well.
3. Spray silicone egg bite mold tray with cooking spray. Add the mixture to the silicone mold tray and fill half way to the top.
4. Place silicone mold tray onto trivet (that came with instant pot) and lower into instant pot.
5. Add lid to the instant pot, per instructions, and make sure the vent is in the "sealing" position.
6. Set the manual high pressure for 8 minutes. Do a natural release for 2 minutes, then do a quick release.
7. When the pressure has been completely released and the pin has dropped, carefully remove the lid.
8. With your pot holders, remove the trivet from the pot with the silicone tray still on it. Let sit for a few minutes, use a large spoon to scoop the egg bites out of the tray and put on a plate lined with paper towel to soak up the remaining moisture.
9. Plate, Serve, and enjoy!
Note: This freezes well, you can store them in the refrigerator for a quick breakfast. Just heat up in the microwave for about 30 seconds.
