Delicious and easy egg muffins. Great for kids and breakfast in the go!
Whisk eggs and cream until fully incorporated then add the veggies, ham and cheese. Season to taste then whisk again until evenly mixed.
Preheat oven to 350 and grease a large 6 portion muffin tin.
Laddle egg mixture evenly into muffin tin, filling each cup 3/4 full. Wipe off any egg that has dripped on to the surface of the tin.
Bake for 20-30 min depending on oven.
