Preheat oven to 375 degrees F.
If using sausage cook until no longer pink. Wisk together eggs, milk, oil, and baking powder. Add the seasonings and desired meat, stir.
Use a 12-cupcake pan lined with muffin cups and spray with oil. Spoon out mixture evenly into the 12 muffin cups. Optional to sprinkle cheese on top.
Bake 20 minutes or until toothpick comes out clean.
Serve with salsa, ketchup, or hot sauce
