an easy way to make an omelette without really calling it an omelette.
whisk 2 eggs in a bowl, and add taco seasoning, salt, pepper, or whatever else you would like... whisk for one to two minutes. warm up a large non-stick pan on medium heat, and place down your tortilla in the center of the pan. pour your whisked eggs over the tortilla - it's ok if the eggs flow over the edges of your tortilla.
cook on medium heat for a few minutes. add your cheese, as much or as little as you want, and then carefully fold your tortilla in half using a spatula. be sure the eggs have cooked enough around the edges to do this. turn down the heat to medium-low, and flip every now and then. try not to burn the tortilla. cook until eggs are done, and serve with sour cream on top.
