Whisk together flour, nutmeg, and salt in a bowl. Beat butter and sugar in bowl 2 min. Add egg yolks. Beat in rum and vanilla. Beat in flour mixture and chocolate chips. *Split dough into 2 pieces. Lay each piece on a piece of parchment, roll dough into a log.
Wrap each log in parchment, refrigerate 2 hours.
Heat oven to 350°.
Line 2 baking sheets. Slice logs into 1/4" thick disks, place them on lined baking sheets.
Bake until browned 15 min. Let cool 15 min.
