Coat pan with cooking spray. Spread unpeeled eggplant on pan. Lightly spray top of eggplant. Broil until brown. Preheat oven to 350. In baking dish layer spaghetti sauce, eggplant and mozzarella then eggplant. Sprinkle with Parmesan cheese. Bake 30 to 40 minutes.
