trim stems and ends fro eggplant, remove strips of peel 1 inch wide from eggplant leaving 1/2 the peel intact
cut into 1/2 inch slices and place in colendar. sprinkle with coarse salt and let drain for 1 hour
rinse thoroughly under cool running water, drain thoroughly and pat dry
whisk eggs and tsp salt together in wide shallow bowl. spread flour and breadcrumbs in similar shallow bowls.
dredge eggplant in flour, shaking off excess. dip in egg, turning to coat evenly, let excess drip back unto bowl
dip eggplant slices in crumbs, pressing to coat.
pour 1/2 cup each olive oil and vegetable oil into medium skillet. heat until a corner of a piece of eggplant sizzles
cook eggplant slices in oil , do not crowd pan, remove and drain on paper towels
preheat oven to 375
heat tomato sauce to simmering,
ladle sauce into 13x9 pan to cover the bottom. sprinkle with even layer of shredded cheese,top with a layer of fried eggplant pressing down gently, tear a few basil leaves over and ladle 3/4 cup sauce to coat evenly.
sprinkle with an even layer of grated cheese
and top with a layer of mozzarella slices using 1/3 of them
repeat this two more times ending with a top layer of cheese that leaves a border of one inch
drizzle sauce around the border and sprinkle the top with the remaining grated cheese
cover loosely with foil and poke several hole in foil with knife
bake 30 mintes
uncover and bake 15 more minutes or until top layer of cheese is golden
let rest 15 minutes then cut and serve
