This is a great Mexican-style stirfry
Wash potatoes and place in oven at 350. Bake for 45 minutes.
Can be boiled instead if you wish. Can also substitute sweet potatoes for regular ones if you wish.
Wash and chop all vegetables And pineapple.
Slice veggie sausage.
Place all items in fry pan with olive oil and fry until al dente.
Remove potatoes from oven and top with stir fry.
Garnish with salsa and sour cream as desired.
