This is great Banana bread, just right!
Combine dry ingredients in separate bowl first.
Then in another bowl cream the vanilla eggs & brown sugar then other wet ingredients.
Add wet ingredients except for bananas and pecans, with others as well mixed then add the bananas and pecans.
Baking instructions
Preheat your oven to 325° F
Line the bottom of the pans with parchment paper
Grease and flour both pans well with coconut oil and small amount of flour, make sure to tap pans to remove excess flour from pans.
Pour mixture in loaf pans fill each pan to about 3/4 full.
Place both loafs in oven on cookie sheet on the center rack and bake for about 1 - 1 1\2 hour.
Check after the 1st hour with toothpick every 5 minutes or so until toothpick comes out clean. Loaves will rise and crack on surface of bread.
Remove from the oven and let sit on rack for several minutes before removing from pans to cool. After resting turn out Banana bread on to rack until cooled and wrap in plastic wrap until ready to serve or freeze...or eat warm with butter!
