Suggest a better descriptionPreheat oven to 425 degrees. Season chicken with salt and pepper. Saute garlic in 1 teaspoon olive oil in a large skillet on medium heat for 1 minute. Add zucchini and saute 3 to 4 minutes. Remove pan from heat. Sprinkle with Parmesan and mozzarella; combine gently. Spread 3 tablespoons zucchini mix onto each of the 6 chicken cutlets; roll up and secure with toothpicks. Combine 3 teaspoons olive oil with lemon juice; dip chicken rolls into this mixture and roll in breadcrumbs. Place in baking dish and spray tops with olive oil spray; bake 25 to 30 minutes.
