In large mixing bowl with a stand mixer, beat together the cream cheese and butter until smooth. Gradually beat in the flour and salt. Knead the dough lightly by hand. Cover dough with plast wrap and refergeriate for 3 hours.
To make filling:
In med. skillet, cook onions and garlic in reserved bacon drippings for 3-4 minutes until the onion is soft but not brown. Sitr in crumbled bacon, spinach, cottage cheese pepper and nutmeg.
Preheat oven to 450.
On a lightly floured surface, roll out the pastry until it is 1/8" thick. Using a 3" biscuit cutter, cut out as many pastries as possible. Place 1 teaspoon of filling on one half of each pastry circle. Moisten the edge of the circle with egg and fold over.
Place pastries on ungreased baking sheet. Gently seal the edges of the empanadas with the times of a fork. Brush the empanada with the egg. use the tines of the fork to prick a small vent in each. Bake in the 450 oven for 10-12 minutes until they are golden.
Serve with Salsa.
