Have 2non stick skillet s or seasoned cast iron
Separate eggs putting yolks in large bowl and whites in medium mixing bowl. Add milk and vanilla to yolks, whisking until smooth. stir in flour, lemon zest and salt until smooth
With clean beaters, beat eggs whites until frothy. Gradually beat in sugar until soft peaks form. Do not over beat.
Gently fold egg whites into mixture until streaks of white disappear. Do not over mix
Heat skillets over medium high. Lightly film the pans with oil. Reduce heat to low.
Scrape batter evenly into skillets, about 1inch deep. Sprinkle each pan with raisins. Cook about 3 minutes until bottoms golden
Cut pancakes into quarters and gently flip to uncooked side is on bottom.
Put skillets in oven. Bake about 10 minutes until puffed and golden on both sides. Can make this about 30 minutes in advance to this point.
Use 2 forks to tears pancakes into random sized pieces. Drizzle with melted butter and confectioners sugar. Return to oven for 3-5 minutes to glaze.
Serve sprinkled with confectioners sugar again and fruit to dollop.
