Easy to make Hello Fresh meal
Slice the peppers.
Slice the scallions and separate whites from greens.
In a small bowl, combine sour cream and hot sauce and some water until it is drizzling consistency
Heat oil and add peppers for 5-7 minutes and add salt and pepper
Meantime, dice chicken and pat dry. Toss with oil, southwest spice, salt and pepper. Add chicken and white scallion to pan with poblano. Cook until no longer pink. If using ground beef, add and cook until browned. Add quarter or 1/2 jar of salsa.
Add mixture to tortillas and place in 9x13 pan. Top with salsa and cheese.
Broil for 3-4 minutes. Top with sour cream and scallion greens.
