Simple but yummy!
1. Brown the hamburger and chopped onion together
2. Warm the enchilada sauce in a pan
3. Dip tortillas in warmed sauce
4. Fill the tortilla with the burger/onion mixture and add cheese
5. Carefully roll it up and place in a baking pan. Repeat for remaining tortillas
6. Pour extra sauce over tortillas
7. Cover with cheese
8. Cover pan with foil and bake 30 minutes at 350 degrees
Mexican rice and refried beans always round out this meal!
