My rendition of enchiladas. Can make with ground chicken or beef.
Preheat oven to 350
1. Brown ground beef
2. Add taco seasoning
3. Saute onion and garlic then turn off heat.
4. Add 1 cup salsa.
5. Dissolve 3 Tbls of tomato paste into 1 cup water. Add to pan.
6. Add 1 cup rotel.
7. Add cheese and chicken to tortillas. Roll up and place in pan.
8. Pour sauce over top of tortillas pan. Cover with cheese.
9. Bake for 10 min or until cheese has melted.
10. Serve over lettuce with mexican rice or white rice and salsa.
