Spicy Chicken Enchiladas
Add the Chicken Breasts to a large pan of water and bring to the boil
Boil for 10 minutes until the Chicken is cooked, then shred
Preheat the oven to 160 degrees
Finely chop the Peppers, Onion, and two Garlic Cloves
Heat a large pan and add a splash of Olive Oil
Add the Peppers and the Onion and fry until softened, adding the Garlic for the final minute
Chop the remaining 4 Garlic Cloves
In a separate pan, heat a splash of Olive Oil and add the remaining Garlic. After 15 seconds, pour in the Passata, bubbling it down until the sauce has thickened.
Add the Cumin, Smoked Paprika, and Coriander to the pan of vegetables and mix
Pour in the Black Beans with the tin water and an extra half a tin of water
Bubble down until the Beans soften
Mash the vegetables, then add the shredded Chicken to the pan
Season the mixture with Salt and Pepper
Once the sauce has thickened, season it with Salt, Pepper, and Chilli Flakes and spoon half of it into a baking dish
Fill each of the Tortillas with the mixture, wrapping them up and laying them side by side tightly in the baking tray
Pour the remaining sauce over the top, ensuring not to cover the edges to allow them to crisp
Grate the Cheddar and scatter it over the Enchiladas
Place the baking dish in the oven for 45 minutes, or until the Cheddar is golden and bubbling
