This is a throw-together dish using whatever ingredients you like. The recipe is very forgiving with your own ingredients and quantities.
Preheat oven to moderate.
Brown the mince. Add the taco mix and a little bit of water.
Add the vegetables and cook.
Add the beans and heat through.
Using a high sided baking tray or dish add mixture to tortillas and roll up.
Pour tinned tomatoes over the top of rolled tortillas. Can add a bit of water to the tomatoes.
Sprinkle over some grated cheese.
Bake for around 25 minutes.
