Chop the red onions in tiny bits.
In a large pan, heat 1 Tbs of oil and add the red onions until caramelized (5 min)
Meanwhile, chop the toasted Pistachio, thin-slice the Avocado, and cut the Endive and the Radicchio in fine strips
In a bowl, mix the caramelized onions, the blue cheese, the balsamic vinegar, the chopped pistachios and 1 tbs of olive oil and mix all together. Then add the radicchio and endive and blend together.
