These were made in the Manhattan Cafe and Bakery (my recipe is dated June 22, 2007). Much like English muffins, but simpler to make.
Combine dry ingredients: flour, yeast, sugar, cinnamon, salt, baking soda and chopped pecans (if using). Warm the juice and water to a temperature good for the yeast. Add the warm liquids to the bottom of the mixing bowl and add most of the dry ingredients. Mix with dough hooks until sticky, then knead, using remaining flour mixture as needed, until dough forms a smooth ball. Allow it to rise until doubled in bulk. Shape into three loaves. Sprinkle a light layer of cornmeal in the bottom of each of three greased (or sprayed) loaf pans. Place each loaf in a prepared pan and allow to rise a second time. Bake at 350 until done.
