1) Set out pie crust so that it is at room temperature, at least 30 minutes. Preheat oven to 400 degrees.
2) Add butter to a medium saucepan at medium-heat. Add meat to butter in skillet. Add garlic, minced onion and dried thyme to meat. Cook for 5 minutes, stirring occasionally.
3) Sprinkle brown gravy packet over meat, then add beef stock and stir to combine. Add salt and pepper, to taste. (LOTS of black pepper!) Add mushrooms and cook briefly, then turn it off.
4) Prepare ramekins. Fit pie crusts into bottom of ramekins and trim. Using a fork, prick the crust repeatedly so that it won't bubble up during cooking. Divide meat equally between ramekins and then lay another layer of dough as a topping on each ramekin and seal the edges. Mix egg yolk with water and brush over pies.
5) Put pies onto a cookie sheet so that they won't overflow into the oven. Bake pieces for 30 minutes at 400 degrees. Serve hot.
