Bring a large sauce pan of water to a boil. Salt well, and add the greens, and blanche for 2 to 3 minutes.
Drain and refresh under running cold water. Leave it to dry in a colander, tossing occasionally to let all the water escape.
To serve, sprinkle with 2 to 3 tablespoons olive oil, then juice of 1/2 lemon, and a good sprinkling of salt and pepper
